Chicken Week- Day Three: Chicken Nachos

Onto our next recipe- But first a quick recap if you haven't read the two previous posts. My husband and I love food and cooking, but we are lazy. We invented a meal prep plan that's working for us, so I'm sharing the basic principles with you, the internet. Last night we made chicken nachos. Here's the very basic info. I probably won't give measurements and such, because that's just not how I cook. You've just got to do what looks and feels good when it comes to food. Unless you're making something new, special, or complicated... nachos are none of those things... Chicken Week- Day Two: Chicken Marinara Bake and Eggplant

It's chicken week! #chickenweek is my favorite meal planning week. First let me tell you a little more about our process, then I'll show you what we had for dinner! Ready, set, go! Matt and I decided instead of prepping whole meals, we'd just prep the meat for the week, then build meals around it. We made a board on Pinterest (love it!) with sections (only made me love it more!) for the item we prep. You can view our Chicken section . After realizing we could make one big pot of chili last a week, we decided to give chicken a go. First we picked out 7 days worth of recipes that included chicken in some way. This was EXTREMELY helpful with focusing our grocery shopping. All we had to do was open our board on Pinterest and get the items we needed for the week. I really don't like eating food out of a box or a can if I can avoid it. I find them way too salty. If we are focused on what we're buying for a week, we can go fresh all the way. Nice to Meat You!

  Hello once again internet! Sometimes I blog, sometimes I don't. Lucky for you, here I am again with something to say!  My husband and I both work full time. (If you read my The Great Many Steps of Online Dating blog, spoilers, I married my friend about a year later!) We want to be healthier or at least less gross, if we're being really honest with ourselves. (The gross factor times laziness equals lots of Taco Bell in our house.) Matt (my husband has a name and everything!) and I both enjoy cooking, especially together. We just haven't always been the best about meal planning. We've tried a few different methods, usually when my step sons are visiting their mom and we've got extra time, but they fall apart soon after we've got the boys back.  UNTIL NOW!
